A compound found in shiitake mushrooms scientifically known as eritadenine has been shown to lower blood cholesterol levels. Eritadenine helps to increase the level of cholesterol in the stool which helps to lower the cholesterol level in the blood.

Helps fight cancer

Currently, scientists studying shiitakes realize that this mushroom has some anti-tumor effects in animals. However, more research is needed to apply them in humans. These effects may stem from the fungus' ability to boost the immune system. They contain a compound called lentinan that has been shown to boost the immune system's ability to fight off infections and several other diseases. Lentinan may decrease and slow cancer cell growth while enhancing activity to fight tumors by activating certain cells and proteins that attack cancer.

Powerful antioxidant

Antioxidants help the body fight free radicals that alter cells that lead to cancer. Shiitake mushrooms contain a powerful antioxidant called L-ergothioneine. Studies show that shiitakes contain higher concentrations of L-ergothioneine than chicken liver and wheat germ, two food sources previously believed to contain the highest concentrations of L-ergothioneine.

Shiitake mushrooms are quite benign and have very few side effects in the body. In rare cases, some people experience a rash from eating or coming into contact with shiitakes caused by the lentinan substance on the mushroom's surface.
